Have you only eaten bok choy stir-fried? No need to bother with stir-frying anymore! Simply dressing it makes for a cleaner, crisper bok choy salad. It’s a perfect dish for when you have a lack of appetite.
Main Ingredients- 450g Bok Choy
- 1 tsp Salt (for blanching)
Seasoning Ingredients- 1 Tbsp Minced Green Onion (finely chopped)
- 2 Pinches of MSG Salt (fine salt)
- 1 tsp Sesame Oil
- 1 Tbsp Toasted Sesame Seeds

Cooking Instructions
Step 1
First, prepare the fresh bok choy by trimming it. If the leaves are too large, cut them into 2-3 bite-sized pieces. Separating them leaf by leaf will help the seasoning coat them evenly, making them even tastier.
Step 2
Fill a pot with plenty of water and bring it to a rolling boil. Once the water is boiling, add 1 teaspoon of salt. Then, add the prepared bok choy. Blanch it for just 30 seconds, a very short time, to maintain its crispiness. Be careful not to overcook it, as it will become mushy.
Step 3
Immediately transfer the blanched bok choy into cold water. Gently swish and rinse it in the cold water 2-3 times. This removes any lingering impurities and enhances the vibrant green color of the bok choy.
Step 4
Firmly squeeze out the water from the clean bok choy using both hands. If there’s remaining water, the seasoning will become diluted and bland, so removing as much water as possible is crucial. Once squeezed, add the minced green onion, MSG salt, sesame oil, and toasted sesame seeds to the bok choy.
Step 5
Now, gently toss and mix the bok choy with your hands to ensure all the seasonings are evenly distributed. Once well-seasoned, you’ll have a delicious vegetable side dish that is crisp, with the fresh aroma and taste of bok choy intact! During seasons like the monsoon when vegetables are expensive, bok choy is a great, affordable option. It’s a healthy dish you can enjoy affordably year-round.
