Main Ingredients- 240g fresh bean sprouts
- Appropriate amount of green onion, finely chopped
- 1 green chili pepper, finely chopped
Seasoning Ingredients- 3 Tbsp soy sauce
- 1/2 Tbsp anchovy sauce or fish sauce
- 1 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp minced garlic
- A pinch of sugar (adjust to taste)
- Canola oil or cooking oil, as needed

Cooking Instructions
Step 1
First, rinse the bean sprouts thoroughly under running water two to three times. If the heads have detached, drain them in a sieve. Place all the rinsed bean sprouts into a wok or a wide pan for stir-frying.
Step 2
Remove the seeds from the green chili pepper and finely chop it. Finely chop the green onion as well. Prepping the vegetables like this beforehand makes the cooking process much smoother.
Step 3
Cover the pan with a lid and bring to a boil over high heat for a short while. Do not add any water! The moisture from the bean sprouts themselves is enough to cook them. Bean sprouts are best cooked quickly over high heat to maintain their crispiness.
Step 4
Once the bean sprouts start to wilt slightly, add the chopped green onion and green chili pepper, and stir-fry together.
Step 5
Now, add all the seasoning ingredients to the pan: 3 Tbsp soy sauce, 1/2 Tbsp fish sauce, 1 Tbsp gochugaru, 1 Tbsp minced garlic, and a pinch of sugar according to your preference. Drizzle in an appropriate amount of canola oil or cooking oil.

Using a spatula or chopsticks, quickly stir-fry to evenly distribute all the ingredients and seasonings. It’s important to stir gently so as not to mash the bean sprouts.
Step 7
Personally, I find stir-fried bean sprouts taste much better when cooked until almost all the moisture has evaporated, making them quite dry. Cook to this extent based on your preference. Finally, sprinkle with sesame seeds for a nutty flavor and give it a quick toss to finish. This delicious stir-fried bean sprouts dish is best enjoyed warm!
