You’ve probably tasted stir-fried bamboo shoots in dishes like Jjampong or Yusansel at Chinese restaurants. They are known for their wonderfully crisp texture! In the past, it was hard to find fresh bamboo shoots outside of cans, but nowadays, pre-cooked bamboo shoots are readily available in supermarkets, making this dish even easier to prepare. I highly recommend this simple yet unique side dish, stir-fried bamboo shoots!

Main Ingredients
  • 300g cooked bamboo shoots
  • 2 green chili peppers or mild peppers
  • 1/4 onion

Seasoning Ingredients
  • 1 Tbsp cooking oil
  • 2 pinches of salt (adjust to taste)
  • 1 Tbsp oyster sauce
  • 1 Tbsp cooking wine (mirin, etc.)
  • 1 tsp sesame oil
  • 1 tsp sesame seeds

Cooking Instructions

Step 1

First, rinse the cooked bamboo shoots thoroughly under running water. If you’re using fresh bamboo shoots, you’ll need to peel them, boil or blanch them, and then drain them well before proceeding.

Step 2

Slice the prepared bamboo shoots lengthwise into bite-sized strips. Cutting them slightly thicker than paper-thin will enhance the enjoyable crunch.

Step 3

Wash the 1/4 onion and 2 chili peppers. Slice the onion into strips similar in length to the bamboo shoots. For the chili peppers, slice them in half lengthwise, remove the seeds, and then cut them into strips. (If you prefer a spicier dish, feel free to use Korean red chili peppers.)

Step 4

Now, let’s start cooking! Turn the heat to medium-high and preheat your pan. Once the pan is hot, add 1 tablespoon of cooking oil. Add the sliced bamboo shoots and about 1-2 pinches of salt, then stir-fry them quickly.

Step 5

Once the bamboo shoots begin to soften slightly, add the sliced chili peppers and continue stir-frying to release their aroma.

Next, add 1 tablespoon of cooking wine and 1 tablespoon of oyster sauce. Pour them towards the edge of the pan and stir-fry rapidly over high heat. The oyster sauce will add a savory depth, while the cooking wine helps to tenderize and remove any unwanted flavors.

Step 7

Finally, add the sliced onion and stir-fry. To keep the onion crisp and sweet, add it towards the end and cook only briefly. Stir-frying over high heat for a short time will preserve its pleasant crunch and natural sweetness.

Step 8

Just before turning off the heat, sprinkle in 1 teaspoon of sesame oil and 1 teaspoon of sesame seeds, and give it a final quick toss to incorporate the nutty aroma.
