Stir-fried anchovies are a staple side dish that’s always welcome on the table. Today, we’re making a delightful version using ‘Gairi’ anchovies, ensuring it’s not too salty but packed with savory flavor. This recipe is perfect for adding a delicious touch to your everyday meals. Adding nuts provides extra nutrition and a satisfying crunch, while a touch of chili powder adds a pleasant kick!

Main Ingredients

  • 250g Dried Anchovies (Gairi Anchovies, for soup base)
  • 1 generous handful of nuts (e.g., walnuts, almonds)

Seasoning

  • 3 Tbsp Soy Sauce (adjust according to anchovy saltiness)
  • 2 Tbsp Plums Extract (Maesilcheong)
  • 1 Tbsp Cooking Wine (Mirin)
  • 1 Tbsp Oligosaccharide
  • 1 Tbsp Sesame Oil
  • 3 Tbsp Gochugaru (Korean Chili Flakes)

Cooking Instructions

Step 1

First, to remove any fishy smell and excess moisture, place the anchovies in a dry pan over medium-low heat and stir-fry for 1-2 minutes. Be gentle to avoid breaking the anchovies. Let them cool slightly.

In the same pan, add the nuts and lightly toast them to enhance their nutty aroma. After toasting the nuts, add the soy sauce, plum extract, and cooking wine to the pan. Stir well and let the sauce simmer briefly. Add the prepared anchovies and stir-fry together until the sauce evenly coats them.

If you prefer a spicier flavor, add a generous amount of gochugaru (Korean chili flakes). You can also add a little gochujang (red chili paste), but today we’ll achieve a clean spicy taste with just gochugaru. After adding the gochugaru, stir-fry quickly over low heat to prevent burning the anchovies.

Finally, add the oligosaccharide for a glossy finish and a touch of sweetness. Drizzle in the sesame oil at the very end for a rich aroma. Stir everything together once more lightly to ensure all ingredients are well combined. Your delicious stir-fried anchovies are ready!
