Loved by everyone as a staple side dish, stir-fried anchovies (Jjanmyeolchi Bokkeum)! Not only do they strengthen bones, but they’re also a true ‘rice thief’ in the best way. Here’s the golden recipe for a basic, delicious stir-fried anchovy dish. With this simple yet flavorful recipe, you’ll master this beloved Korean side dish!
Main Ingredients- 2 cups dried anchovies (Jiri-myeolchi) (approx. 100g)
Seasoning Ingredients- 0.5 Tbsp minced garlic
- 3 Tbsp Cheongju (rice wine/cooking wine)
- 0.5 Tbsp soy sauce
- 0.3 Tbsp sugar (adjust to your preference)
- 3 Tbsp corn syrup (for shine and sweetness)
- A little sesame oil or toasted sesame seeds (for nutty flavor!)
- 0.5 Tbsp minced garlic
- 3 Tbsp Cheongju (rice wine/cooking wine)
- 0.5 Tbsp soy sauce
- 0.3 Tbsp sugar (adjust to your preference)
- 3 Tbsp corn syrup (for shine and sweetness)
- A little sesame oil or toasted sesame seeds (for nutty flavor!)
Cooking Instructions
Step 1
First, to remove any fishiness and ensure crispiness, place the anchovies in a dry pan (no oil) over low heat and stir-fry them gently to remove moisture. You want to evaporate the moisture, so stir continuously for about 1-2 minutes, being careful not to burn them.
Step 2
Once stir-fried, place the anchovies in a fine-mesh sieve and gently shake to remove any crumbs, bone dust, or other small impurities. This step ensures a clean and neat final dish.
Step 3
Now, let’s prepare the seasoning. Heat the pan over medium-low heat and add a little cooking oil. Add the 0.5 Tbsp of minced garlic and stir-fry until fragrant to release its aroma. Once the garlic is aromatic, add the stir-fried anchovies and pour in the 3 Tbsp of Cheongju. The rice wine will help eliminate any remaining fishy odors. Stir-fry together until the alcohol evaporates.
Step 4
After the alcohol from the Cheongju has evaporated and it’s well combined with the anchovies, add 0.5 Tbsp of soy sauce and 0.3 Tbsp of sugar. Stir to coat the anchovies evenly with the sweet and savory seasoning. Keep the heat on low and be careful not to let the seasoning burn.

Once the anchovies have absorbed some of the seasoning, turn off the heat. Add the 3 Tbsp of corn syrup. Adding corn syrup off the heat prevents the anchovies from becoming sticky or burning, while adding a beautiful shine and delicious sweetness. Stir well with the residual heat of the pan to ensure the seasoning evenly coats the anchovies.

Finally, drizzle with a little sesame oil for a nutty aroma and sprinkle with toasted sesame seeds to finish. The combination of sesame oil and seeds will elevate the flavor of your stir-fried anchovies.
