Crispy and Delicious Stir-Fried Anchovies
Quick and Easy Stir-Fried Anchovies Recipe
Make delicious stir-fried anchovies simply and quickly! A perfect side dish for when you have a poor appetite.
Main Ingredients- Anchovies 70g (gutted)
- Minced garlic 1 Tbsp
- Cooking oil 3 Tbsp
Seasoning- Soy sauce 2 Tbsp
- Oligosaccharide 4 Tbsp (sweetness adjustable)
- Sugar 1 Tbsp
- Mayonnaise 1 Tbsp (for a creamy texture)
- Cooking wine (Mirin) 1 Tbsp
Optional Ingredients & Toppings- Nuts 2 Tbsp (almonds, walnuts, etc.)
- Sesame seeds, a pinch
- Soy sauce 2 Tbsp

Cooking Instructions
Step 1
Heat a frying pan over medium-low heat, then add 70g of anchovies. Stir-fry for about 2-3 minutes without burning them to remove any fishy smell. Fry until the anchovies are lightly golden brown and smell fragrant.
Step 2
If you want to add nuts (like sliced almonds or walnuts), add them during the last minute of stir-frying the anchovies. Be careful not to burn the nuts. Stir-frying them lightly with the anchovies will add a nutty aroma.

They are perfectly stir-fried when the anchovies look golden brown and crispy, as shown in the picture.
Step 4
Transfer the stir-fried anchovies to a separate bowl to cool slightly. This helps the seasoning to penetrate the anchovies well and prevents them from breaking apart.
Step 5
In a small bowl, combine 2 Tbsp soy sauce, 4 Tbsp oligosaccharide, 1 Tbsp sugar, and 1 Tbsp cooking wine. Mix well to create the seasoning sauce. You can adjust the sweetness by changing the amount of oligosaccharide.
Step 6
Reheat the frying pan over medium-low heat. Add 3 Tbsp cooking oil and 1 Tbsp minced garlic. Stir-fry for about 30 seconds to 1 minute until fragrant, being careful not to burn the garlic, to create garlic-infused oil.
Step 7
Return the stir-fried anchovies to the frying pan. Stir-fry lightly for about 1 minute to coat the anchovies with the garlic oil. This makes the anchovies more savory and helps the seasoning adhere better.
Step 8
Pour the prepared seasoning sauce into the pan with the anchovies and stir-fry quickly. Once the sauce starts to thicken, add 1 Tbsp of mayonnaise generously to add a creamy umami flavor and mix well. Mayonnaise helps prevent the anchovies from clumping and adds a smooth taste.
Step 9
Turn off the heat and sprinkle a generous amount of sesame seeds. Mix well. You can also drizzle a little sesame oil if desired.
Step 10
Serve the delicious stir-fried anchovies on a plate. This makes an excellent side dish to enjoy with a warm bowl of rice!
