Here’s a delicious way to use up leftover Spam! On a rainy day, try making a kimchi pancake with added Spam. This recipe will guide you step-by-step to create a pancake that’s crispy on the outside, tender on the inside, and deliciously savory with every bite.

Main Ingredients
  • 1 head of well-fermented kimchi (approx. 500g)
  • 1/2 can of Spam (approx. 200g)
  • 3 ladles of pancake mix (approx. 150g)
  • 2.5 cups of cold water (approx. 500ml)
  • 2 Cheongyang chili peppers (optional, for extra spice)
  • 1 red chili pepper (for color and a hint of sweetness)
  • Generous amount of cooking oil (for frying)

Cooking Instructions

Step 1

First, thoroughly rinse the kimchi to remove excess brine and chop it into small, bite-sized pieces. If the kimchi is too strong in flavor, you can rinse it lightly. Remember, delicious kimchi makes a delicious pancake!

Step 2

Remove the stems from the Cheongyang and red chili peppers, deseed them, and finely mince them. If you enjoy a spicier taste, feel free to add more Cheongyang peppers. (Tip: Lightly oiling your knife blade can prevent the chili peppers from sticking, making them easier to chop!)

Step 3

Take the leftover Spam, cut it into about 0.5cm thick slices, and then finely mince it. You don’t need to mince it too finely; leaving some slightly larger pieces will add a pleasant texture to the pancake.

Step 4

In a large bowl, combine the chopped kimchi, minced Spam, and minced chili peppers. Mix them all together.

Now, let’s make the batter. Add 3 ladles of pancake mix to the bowl, then pour in 2.5 cups of cold water. Whisk well to ensure there are no lumps. Adjust the consistency by adding a little more water or pancake mix until the batter is neither too thin nor too thick. (Tip: Using cold water helps create an extra crispy pancake!)

Step 6

Check the batter’s consistency. It should flow smoothly when scooped with a ladle. If it’s too stiff, the kimchi might not cook through properly, and if it’s too runny, the Spam and kimchi might separate.

Heat a frying pan over medium heat and generously add cooking oil. The oil should be hot enough to sizzle when you add the batter. (Tip: If the oil isn’t hot enough, the pancake will absorb too much oil and become soggy.)

Once the pan is hot, ladle the batter onto the pan. Use the back of a spoon or ladle to spread it thinly. Spreading it thinly ensures it cooks evenly and becomes crispy.
