  • 300g soybean sprouts
  • Pinch of MSG-based salt (Matsogeum)
  • Small amount of white part of green onion
  • 2 Tbsp perilla oil
  • 1/2 Tbsp minced garlic
  • 2 Tbsp roasted perilla powder
  • 1 Tbsp salt

Cooking Instructions

Step 1

One bag of soybean sprouts is quite a generous amount, so measure out about 300g to prepare. Rinse the soybean sprouts thoroughly under running water to remove any dirt or impurities. Washing them this way helps ensure a fresh and crisp texture.

Step 2

Finely chop the white parts of the green onion. The white part of the green onion has a pleasant aroma and sweetness, making it a great addition to salads.

Step 3

Pour about 300ml of water into a pot and add 1 tablespoon of salt. Bring the water to a boil. Adding salt while boiling helps to lightly season the soybean sprouts, making them more flavorful.

Step 4

Once the water is boiling vigorously, add the prepared soybean sprouts to the pot. Cover the pot and boil for 2 to 3 minutes. Here’s an important tip! When boiling soybean sprouts, if you start with the lid off, keep it off throughout the boiling process. If you start with the lid on, keep it on. This helps maintain their crispness. Stir gently with chopsticks for about 2 to 3 minutes until cooked.

Step 5

Immediately rinse the boiled soybean sprouts under cold water for about 2 to 3 minutes. Rinsing with cold water cools down the sprouts and maximizes their crunchy texture, making your salad twice or even three times as crisp!

Step 6

Drain the rinsed soybean sprouts thoroughly in a colander. Properly draining the water is essential so the seasoning adheres well and the salad tastes delicious.

Step 7

Now, prepare the seasoning ingredients. You’ll need 2 tablespoons of perilla oil, a pinch of MSG-based salt (Matsogeum), 1/2 tablespoon of minced garlic, and 2 tablespoons of roasted perilla powder. The MSG-based salt is for adjusting the seasoning, while the perilla oil and powder add a nutty, savory depth.

Step 8

Transfer the drained soybean sprouts to a bowl and add all the prepared seasoning ingredients. Gently mix using chopsticks and a spoon, being careful not to mash the sprouts. Mix thoroughly so that all the seasonings are evenly distributed.

Step 9

Finally, add the chopped green onions and mix lightly. It’s nice to set aside a small amount of the green onions to use as a garnish on top of the finished salad for presentation. Your delicious soybean sprout salad is now ready!
