Spinach, a bunch of it, is perfect for consuming within a day or two, so you don’t have to worry too much about it going bad! If you’re living alone and have leftover spinach, it’s great for applications like bibimbap, fried rice, or rice balls! I’ll share a delicious seasoned spinach recipe with you.
Main Ingredients- 1 bunch spinach (approx. 300g)
For Blanching Spinach- 1 tablespoon salt

Step 1
Prepare one bunch of fresh spinach. First, trim the root ends of the spinach with a knife. Remove any overly dirty leaves or wilted ones. Rinse the cleaned spinach several times under cold running water to thoroughly remove dirt and debris. After rinsing, soak the spinach in cold water for a short while; this helps keep the spinach fresh and enhances its crispiness.
Step 2
In a large pot, bring plenty of water to a rolling boil. Once the water is boiling, add 1 tablespoon of salt. Adding salt while blanching helps to keep the spinach a vibrant green color and minimizes nutrient loss. Add the prepared spinach to the boiling water and blanch for exactly 40 seconds, flipping gently to ensure even cooking. Over-blanching spinach will make it mushy and destroy nutrients, so be sure to time it carefully.
Step 3
Immediately remove the blanched spinach from the hot water and rinse it under cold running water to cool it down quickly. Rinsing in cold water is key to preserving the spinach’s crisp texture. To remove excess water, gather the spinach in your hands and squeeze firmly to wring out as much water as possible. Be careful not to squeeze too hard, as this can break down the spinach fibers; squeeze with moderate pressure.
Step 4
Place the well-drained spinach into a large bowl. Now it’s time to mix in all the seasoning ingredients. Add 1 tablespoon of soy sauce or tuna fish sauce (or about 1 teaspoon of salt if substituting), 1 tablespoon of sesame oil, 0.5 tablespoon of minced garlic, and 0.5 tablespoon of sesame seeds. You can optionally add a bit of chopped green onion for extra flavor. Gently mix everything together with your hands until well combined. This creates a delicious seasoned spinach side dish. Taste and add a little more salt if needed.
