When fresh scallions are on sale, it’s hard to resist! I’m sharing a recipe for a wonderfully crispy scallion salad that my husband absolutely loves. Add vitality to your dining table with this simple yet delicious side dish.
Ingredients- 1 bunch scallions (approx. 200g)
- 1 Tbsp minced garlic
- 1 Tbsp soy sauce
- 1 Tbsp sesame oil
- 1 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp toasted sesame seeds
- A little bit of green onion (white parts mainly, finely chopped)
- A pinch of salt (for seasoning)

Step 1
The dish I’m introducing today is a crispy and delicious scallion salad. You can make a wonderful side dish with simple ingredients.
Step 2
First, trim the scallions cleanly. Remove any yellow leaves or dirty parts, and trim the roots slightly for a better presentation. Wash them thoroughly under running water to remove any dirt or debris. Bring water to a boil, add a pinch of salt (about 1/2 tsp per 1 liter of water), and briefly blanch the scallions for about 10-20 seconds. Be careful not to overcook them, as they will become mushy. Immediately rinse the blanched scallions in cold water to cool them down and drain them thoroughly. Properly draining the water is crucial to prevent the salad from becoming watery.
Step 3
Once drained, cut the scallions into bite-sized pieces, about 5-7 cm long. Place the cut scallions in a large bowl and add all the seasoning ingredients: gochugaru, minced garlic, soy sauce, sesame oil, and toasted sesame seeds.

Now, your touch is important! Gently mix the ingredients with both hands, like kneading dough, ensuring the seasoning coats the scallions evenly. Be careful not to mix too vigorously, as this can break the scallions.

Finally, taste and adjust the seasoning with salt if needed. Add salt and gently mix again to evenly distribute the seasoning. Adding a little finely chopped green onion at this stage enhances the flavor.
