Cooking Instructions
Step 1
First, lightly rinse the prepared radish kimchi under running water. This helps to mellow out the saltiness and strong fermented flavor. Cut it into bite-sized pieces, similar to diced kimchi (kakdugi), so it mixes well with the rice and provides a pleasant texture.
Step 2
Heat a little cooking oil in a frying pan over medium-low heat. Add the chopped radish kimchi and stir-fry. If the kimchi is too sour or has a bitter taste, add 1 tablespoon of sugar at this stage. This will neutralize the bitterness and enhance the savory flavor, making it much smoother.
Step 3
Once the radish kimchi is sufficiently stir-fried, add warm cooked rice and drizzle in 2 tablespoons of oyster sauce. Oyster sauce is a magical ingredient that deepens the flavor of fried rice. Mix everything thoroughly to ensure the rice grains are evenly coated with the delicious mixture.
Step 4
Increase the heat to high and stir-fry quickly to combine the rice and kimchi well. When the rice grains become fluffy and all ingredients are well incorporated, turn off the heat. Finish by drizzling a little fragrant sesame oil and sprinkling some toasted sesame seeds. Your delicious radish kimchi fried rice is ready!
