This crispy and delicious chive salad, made with simple seasonings in just 5 minutes, is a perfect side dish that will have you reaching for more rice. Its refreshing sweet, sour, and spicy flavor will awaken your appetite and complement any meal beautifully.
Main Ingredients
- 100g Chives (about one handful)
- 1/2 to 1 Onion (adjust to your preference)
Chive Salad Seasoning
- 1 Tbsp Minced Garlic
- 3 Tbsp Gochugaru (Korean chili flakes, adjust for spice level)
- 1 Tbsp Sugar (adjust for sweetness)
- 1 Tbsp Maesil Extract (plum syrup, for umami and shine)
- 2 Tbsp Soy Sauce (for saltiness and umami)
- 2 Tbsp Vinegar (for a tangy flavor)
- 1 Tbsp Anchovy Sauce (for deep umami, can substitute with fish sauce)

Cooking Instructions
Step 1
First, wash the chives thoroughly under running water. It’s important to wash them carefully to ensure no dirt or debris remains. Gently pat them dry to remove excess water.

Cut the clean chives into bite-sized pieces. Typically, cutting them into 3-4 cm lengths helps the seasoning to penetrate well and makes them easy to eat. If they’re too long, they can be difficult to pick up with chopsticks.

Peel the onion, then thinly slice it into slivers. If you find raw onion too pungent, you can soak the slivers in cold water for a few minutes before draining and using them. This will make them even crispier and milder.

Place the prepared chives and sliced onion into a bowl. Add all the seasoning ingredients (minced garlic, gochugaru, sugar, maesil extract, soy sauce, vinegar, and anchovy sauce). Feel free to adjust the seasoning ratios to your liking.
