The key to a great potato pancake is slicing them thinly and evenly! Using a mandoline slicer will help you achieve uniform thinness, ensuring they cook quickly and evenly. If slicing by hand, aim for the thinnest slices possible.

Using a mandoline slicer, thinly slice the potatoes into a wide bowl. It’s best to cook them immediately after slicing to prevent browning.

Thinly slice the onion, similar to the potatoes, and add it to the bowl with the potatoes.

The Korean chili pepper is optional. If you enjoy a spicy kick, remove the seeds, mince it finely, and add it to the mixture to enhance the flavor of the pancake. If you don’t like spicy food, you can omit it or use less.

If you are using pancake mix, you generally don’t need to add salt. However, if you are using all-purpose flour, season with a pinch of salt for better flavor.

Heat a frying pan with a generous amount of cooking oil. Once the pan is hot, ladle the batter onto the pan and spread it out thinly. Spreading it thinly will result in a crispier pancake.
