How to Make Baek Jong Won’s Oyster Pancakes
We tried making oyster pancakes by frying them for a wonderfully crispy texture! Enjoy the fresh taste of the sea with these delightful pancakes.
Ingredients- 160g fresh oysters
- 40g pancake mix (about 4 Tbsp)
- 50g water (about 4 Tbsp)
- 1/3 stalk green onion, finely chopped
- 1 egg
- 1/3 cup cooking oil (generous amount)

Step 1
First, it’s crucial to clean the oysters thoroughly. Place the oysters in a bowl and gently wash them using coarse salt or grated radish. Rinse them under running water and then briefly soak them in clean water for just a moment before draining well. Over-soaking can wash away the oyster’s natural flavor, so be mindful of the time.
Step 2
After draining the oysters, add the pancake mix and water to them. Mix well until there are no lumps, forming a batter. You can slightly adjust the ratio of pancake mix and water depending on the oyster’s moisture content to achieve a consistency that’s not too runny.
Step 3
Finely chop the green onion. Add the chopped green onion to the batter and mix evenly. Adding more green onion will enhance the flavor and texture of the oyster pancakes. If you like a bit of spice, you can also add finely minced chili peppers.

Finally, crack in one egg and mix gently to finish the batter. The egg will help make the pancakes crispier and more flavorful when cooked.

Now, let’s fry the pancakes! Generously coat a pan with cooking oil and preheat it over medium-high heat. Once the oil is sufficiently hot, scoop the batter by the tablespoon and carefully drop it onto the pan. Avoid making the pancakes too thick.

Cook the oyster pancakes for about 2-3 minutes until they turn golden brown and crispy. To ensure they are fried to a perfect crisp, it’s best to cook them in batches of 2-3 pieces at a time rather than overcrowding the pan, which can lower the oil temperature.
