How to Make Simple and Tasty Onion Kimchi – Your Perfect Noodle Companion!
When you’re craving something delicious, especially with instant noodles, this Onion Kimchi is the perfect side dish! Its satisfying crunch and sweet and spicy seasoning make it incredibly tasty. While great with rice, it truly elevates the flavor of ramen. Even beginners can easily make this, so give it a try!
Main Ingredients- 5 medium onions
- 2 Tbsp coarse sea salt (Cheonilyeom)
Seasoning Ingredients- 4 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp plum extract (maesilcheong)
- 1 Tbsp minced garlic
- 2 Tbsp anchovy sauce (myeolchi aekjeot)
- 1 Tbsp salted fermented shrimp (saeu-jeot), finely minced
- A pinch of sesame seeds
- 4 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp plum extract (maesilcheong)
- 1 Tbsp minced garlic
- 2 Tbsp anchovy sauce (myeolchi aekjeot)
- 1 Tbsp salted fermented shrimp (saeu-jeot), finely minced
- A pinch of sesame seeds
Cooking Instructions
Step 1
First, prepare 5 medium-sized onions. Make sure they are fresh.
Step 2
Carefully peel the outer skin off the onions. You can trim off the root end if desired.
Step 3
Cut the peeled onions into bite-sized pieces, about 2-3 cm long. Cutting them too thinly can affect the crispiness.
Step 4
Place the cut onions in a large bowl and sprinkle evenly with 2 tablespoons of coarse sea salt. Let them sit for about 15-20 minutes to wilt slightly while retaining their crispness. It’s good to toss them once or twice during this time.
Step 5
While the onions are salting, prepare the seasoning. In a separate bowl, combine 4 tablespoons of gochugaru, 1 tablespoon of plum extract, 1 tablespoon of minced garlic, 2 tablespoons of anchovy sauce, and 1 tablespoon of finely minced salted fermented shrimp. Mix well. Ensure the salted fermented shrimp is finely minced so the seasoning blends smoothly.
Step 6
Drain the water that has accumulated from the salted onions. Add the prepared seasoning mixture to the onions. Gently mix everything together with your hands or a spatula, being careful not to mash the onions, until the seasoning is evenly distributed.
Step 7
Before transferring the mixed onion kimchi to a container, you can taste it. If it needs more seasoning, you can add a little more anchovy sauce or salt. (This step is optional)
Step 8
Finally, sprinkle a generous pinch of sesame seeds on top for a nutty aroma to complete your delicious Onion Kimchi! It’s tasty right away, but letting it chill in the refrigerator for about a day will allow the flavors to meld for an even richer taste.
