Main Ingredients- Oi-ji (Korean pickled cucumbers) 2 pieces
- Green onion (finely chopped) 5cm portion
Seasoning Ingredients- Gochugaru (Korean chili flakes) 1 Tbsp
- Minced garlic 1/2 Tbsp
- Sugar 1/2 Tbsp
- Sesame oil 1 Tbsp
- Toasted sesame seeds 1 Tbsp
- Gochugaru (Korean chili flakes) 1 Tbsp
- Minced garlic 1/2 Tbsp
- Sugar 1/2 Tbsp
- Sesame oil 1 Tbsp
- Toasted sesame seeds 1 Tbsp
Cooking Instructions
Step 1
First, rinse the two pieces of oi-ji thoroughly under running water. Then, slice them thinly into rounds. Place the sliced oi-ji in cold water for about 10 minutes to gently soak out its saltiness. This step will make the oi-ji even crisper and more delicious.
Step 2
After 10 minutes, drain the oi-ji well using a sieve. Squeeze out any excess water by hand a couple of times. This process removes more moisture, allowing the seasoning to be absorbed better, resulting in a tastier oi-ji muchim.
Step 3
To the squeezed oi-ji, add all the prepared seasoning ingredients (1 Tbsp gochugaru, 1/2 Tbsp minced garlic, 1/2 Tbsp sugar, 1 Tbsp sesame oil, 1 Tbsp toasted sesame seeds) and the finely chopped green onion. Gently mix everything together with your hands until well combined. Make sure all the seasonings are evenly distributed. Your crispy and delicious Oi-ji Muchim, a true rice thief, is now ready!
