First, prepare 200g of lotus root. After peeling it clean, slice it into approximately 0.5cm thick rings that are easy to eat. Slicing them too thin might cause them to break, while too thick will take longer to cook. So, achieving the right thickness is key.

Fill a pot with plenty of water and bring it to a boil. Once the water starts boiling, add 1-2 tablespoons of vinegar. Submerge the sliced lotus root in this vinegar water and blanch for about 3 minutes. This step helps to remove the astringent taste of the lotus root, making it taste cleaner, and also contributes to achieving a crispy texture without frying.

After blanching, rinse the lotus root under cold water and pat it dry. Then, thread each slice onto a wooden skewer. You can slide the skewer through the holes of the lotus root. This technique prevents the slices from sticking together when microwaving, ensuring they cook evenly and become extra crispy and delicious. If you don’t have skewers, arrange the slices on a plate so they don’t overlap.

Now it’s time to use the microwave. Place the skewered lotus root slices on a microwave-safe plate or container, ensuring they are not touching each other. Microwave them for 2 minutes, then repeat this process two more times, for a total of 6 minutes (2 minutes x 3 times). It’s important to check the lotus root’s condition periodically and adjust the cooking time as needed. Be careful not to overcook, as they can burn. Once done and cooled, you’ll have wonderfully crispy lotus root snacks, almost as if they were freshly fried!
