Hello everyone! Today, I’ll be sharing a recipe for delicious fried kelp chips (Dashima Twigak) that will add a satisfying touch to your meals. It’s a super simple recipe that anyone can easily follow. While in the past we had to cut long kelp ourselves, nowadays, there are many convenient pre-cut products available that make cooking even smoother and more enjoyable.

One of the great advantages of this dish is that it doesn’t require many ingredients. Isn’t that wonderfully simple?

Using a generous amount of oil allows you to fry more kelp at once, but today, I’ll be frying with just the amount of cooking oil I’ve prepared. You can achieve a delicious result even with a smaller quantity.

First, pour the cooking oil into a pan and heat it over medium heat. Once the oil is shimmering and hot, carefully add the dried kelp. Kelp can burn very quickly, so it’s crucial to fry it rapidly while flipping it constantly to ensure it cooks evenly. If you don’t pay attention and it burns, it will develop a strong bitter taste, making it unpleasant to eat.

When the kelp hits the hot oil, it will puff up almost instantly. Think of it as frying for about 10 seconds; as soon as it puffs up and becomes crispy, remove it quickly. You can drain the excess oil from the fried kelp in two ways: by pressing it gently with paper towels or by using a sieve. Once the oil is drained, sprinkle the sugar evenly over the kelp. Gently toss the kelp to ensure the sugar coats it uniformly.

Finally, sprinkle some toasted sesame seeds on top, and your delicious fried kelp chips are ready! They are incredibly simple to make, yet have an addictive quality that makes you want more.
