Main Ingredients
  • 100g burdock root
  • 1/2 Tbsp soy sauce
  • 1/2 Tbsp all-purpose flour
  • 1/2 Tbsp cornstarch
  • 100ml cooking oil (for frying)

Cooking Instructions

Step 1

First, prepare 100g of fresh burdock root. Peel the burdock root thoroughly, then slice it diagonally to about 0.5cm thickness. Slicing it diagonally allows it to fry along the grain of the fibers, resulting in a crispier texture.

Step 2

In a bowl, add 1/2 Tbsp of soy sauce to the sliced burdock root and mix gently. Let it marinate for about 10 minutes. This step allows the burdock root to absorb a subtle savory flavor, making it more delicious when fried. Stirring it once in between ensures the seasoning is evenly distributed.

Step 3

Lightly drain any excess liquid from the marinated burdock root. Then, add 1/2 Tbsp of all-purpose flour and 1/2 Tbsp of cornstarch. Mix well to coat the burdock root evenly. Using both flour and cornstarch together creates a crispier and more flavorful coating. Be careful not to make the batter too wet, as this can result in a thick coating.

Step 4

Heat 100ml of cooking oil in a frying pan over medium heat. Once the oil is adequately hot, carefully add the coated burdock root and fry until golden brown and crispy. Avoid overcrowding the pan; fry in batches and stir occasionally to ensure even frying and maximum crispiness. Frying for about 3-4 minutes will yield delicious fried burdock root.
