Crispy and Delicious Chicken Radish Fried Rice
Super Quick 5-Minute Recipe! Kid-Favorite Fried Rice with Chicken Radish
With only leftover cold cucumber soup from yesterday, I pondered what to make for lunch. Then, I decided to whip up a fried rice using chicken radish from the fridge, which my kids absolutely love. A quick and satisfying meal!
Main Ingredients- Spam 80g (approx. half of a 180g can)
- Chicken radish 40g
- Zucchini 80g (or bell pepper, or other desired vegetables)
Seasonings & Others- 1 Tbsp Soy Sauce
- 1/2 Tbsp Sugar
- 1 tsp Salt
- 3 Tbsp Cooking Oil
- 1 bowl of Rice (approx. 1 instant rice pack)

Cooking Instructions
Step 1
Squeeze out excess liquid from the chicken radish and chop it finely. Prepare other vegetables like zucchini or bell pepper, chopped into bite-sized pieces. Dice the spam, using about 80g (half of a 180g can).

Microwave the rice for about 1 minute to warm it up. This helps prevent the rice from clumping when fried, resulting in a fluffier texture.
Step 3
Heat 3 tablespoons of cooking oil in a frying pan over medium heat.

Add the chopped vegetables and diced spam to the pan. Sprinkle with 1 teaspoon of salt and stir-fry until the ingredients are lightly cooked. This step helps to enhance the savory flavors.

Reduce the heat to low. Add the warmed rice, 1 tablespoon of soy sauce, and 1/2 tablespoon of sugar. Gently mix and combine everything with a spatula until well incorporated.

Tip: If you’re using oyster sauce, you can omit the sugar. The umami from the oyster sauce can provide a similar sweetness.

Increase the heat to high and stir-fry for about 2 minutes. It’s important to fry thoroughly to achieve fluffy rice and allow the flavors to meld together.

Pack the fried rice tightly into a warm rice bowl, then carefully invert it onto a serving plate to create a neat presentation.

For an extra touch, you can top with cheese and microwave for 30 seconds, or add a beautifully fried egg for a restaurant-quality finish. This fried rice is perfectly seasoned and loved by kids, earning a big thumbs-up! The sweet and crunchy texture of the chicken radish is truly irresistible.
