Introducing a delicious cabbage kimchi recipe that anyone can easily make with simple ingredients. It’s perfect with its crispy texture and savory flavor!
Main Ingredients- 1/4 head of fresh cabbage
- 1/2 stalk of fresh green onion
Seasoning Ingredients- 1/2 Tbsp coarse salt (for wilting cabbage)
- 1/4 Tbsp granulated sugar
- 2 Tbsp gochugaru (Korean chili flakes) (adjust for color and spice)
- 1/2 Tbsp minced garlic
- 1 Tbsp anchovy sauce (for umami)
- 1 Tbsp tuna sauce (for umami)
- 1/2 Tbsp toasted sesame seeds (for nutty aroma)
- 1/2 Tbsp coarse salt (for wilting cabbage)
- 1/4 Tbsp granulated sugar
- 2 Tbsp gochugaru (Korean chili flakes) (adjust for color and spice)
- 1/2 Tbsp minced garlic
- 1 Tbsp anchovy sauce (for umami)
- 1 Tbsp tuna sauce (for umami)
- 1/2 Tbsp toasted sesame seeds (for nutty aroma)
Cooking Instructions
Step 1
First, wash the cabbage thoroughly and then cut it into bite-sized square pieces, about 2 cm in size. Sprinkle 1/2 Tbsp of coarse salt over the cut cabbage and mix evenly. Let it wilt for about 30 minutes, allowing the cabbage to soften while maintaining its crispiness. It’s good to toss it once or twice during this time.
Step 2
While the cabbage is wilting, prepare the seasoning ingredients. In a bowl, combine 1/4 Tbsp sugar, 2 Tbsp gochugaru, 1/2 Tbsp minced garlic, 1 Tbsp anchovy sauce, and 1 Tbsp tuna sauce. Finally, add 1/2 Tbsp of toasted sesame seeds for a nutty aroma and stir until all the seasonings are well combined.

Step 5
Lastly, thinly slice the green onion diagonally. Add the diagonally sliced green onion to the cabbage kimchi and mix lightly once more. The slightly pungent flavor and aroma of the green onion will further enhance the kimchi’s overall taste.
