I recently had bean sprout japchae as a side dish at a restaurant with a close friend, and it was absolutely delicious. I remember eating more of the bean sprout japchae than the main course! I tried to recreate that amazing taste at home, and my family loved it so much that it’s now a regular in our meal rotation. This japchae boasts a wonderful crispy texture and savory flavor that’s sure to impress.

Main Ingredients

  • 400g fresh bean sprouts
  • 100g dried glass noodles (dangmyeon)
  • 1 Tbsp sesame oil
  • A little cooking oil
  • A little green onion (scallion)

Seasoning Sauce

  • 5 Tbsp soy sauce (jin ganjang)
  • 1 Tbsp oyster sauce
  • 1 Tbsp minced garlic
  • 1 Tbsp sugar
  • A little sesame seeds

Cooking Instructions

Step 1

First, let’s make the delicious seasoning sauce. In a bowl, combine 5 Tbsp soy sauce, 1 Tbsp oyster sauce, 1 Tbsp minced garlic, 1 Tbsp sugar, and a pinch of sesame seeds. Mix well until everything is combined. Your quick and easy sauce is ready!

Wash the bean sprouts thoroughly. Blanch them in boiling water very briefly – just about 1 minute. Immediately rinse them under cold running water to preserve their crispiness. This step is crucial for a satisfying crunch and helps to remove any ‘bean sprout’ smell.

Soak the dried glass noodles in cold water for about 30 minutes until they are pliable. Once softened, boil them in fresh water over high heat for just 2-3 minutes. Be careful not to overcook them, as they can become mushy and lose their texture.

Drain the cooked glass noodles well. While they are still warm, toss them with 1 Tbsp sesame oil and about 2 Tbsp of the prepared seasoning sauce. Mix gently until the noodles are evenly coated. This pre-seasoning helps the flavors penetrate the noodles.

Add the blanched bean sprouts and the thinly sliced green onions to the noodles. Pour in the remaining seasoning sauce. Gently toss everything together, being careful not to mash the bean sprouts or green onions. We’re almost there!

Heat a little cooking oil in a skillet over medium-high heat. Add the mixed bean sprout japchae. Since all the ingredients are already cooked, you only need to stir-fry for about 1-2 minutes. Quick stir-frying will keep the bean sprouts crisp and enhance the fresh flavors without overcooking.

Finally, for a touch of extra aroma and flavor, drizzle a little more sesame oil and sprinkle some sesame seeds over the japchae. Give it a final gentle toss. Your delicious bean sprout japchae is ready to be served! It’s best enjoyed while warm.
