Introducing a nutritious Nurungji Egg Porridge recipe, blending the savory flavor of toasted rice crusts with smooth, cooked egg. It’s the perfect choice to warm you up on a chilly day!
Essential Ingredients- 100g crispy toasted rice crust (Nurungji)
- 700ml cool water
- 1 fresh egg
- 1/2 fresh green onion

Step 1
First, carefully check and prepare all the ingredients needed for the recipe. Place 700ml of cool water and 100g of crispy toasted rice crust (Nurungji) together in a pot.

While the Nurungji softens in the pot, start preparing the green onion. Finely mince 1/2 green onion, making it small enough to be enjoyed even by children.

Also, prepare the toasted sesame seeds. If you don’t have a mortar and pestle, you can place the sesame seeds in a plastic bag and crush them with your hands. This will enhance their nutty aroma!

Now, once the water comes to a rolling boil, continue to cook over high heat for about 10 minutes. This process will soften the hard Nurungji, creating the perfect porridge consistency. Once it reaches your desired tenderness, add the minced green onion and stir gently.

Crack in 1 fresh egg and quickly stir vigorously with chopsticks or a whisk to scramble the egg into soft curds. Don’t worry about over-stirring.

As soon as the egg is fully cooked and you see soft white curds, immediately turn off the heat. Carefully transfer the warm porridge to a serving bowl.

This is the final touch. Drizzle 0.5 Tbsp of fragrant sesame oil over the porridge. The aroma of the sesame oil will deepen the flavor of the dish.

Finally, sprinkle 1 Tbsp of the prepared toasted sesame seeds over the top. Your Nurungji Egg Porridge is now complete! It’s best enjoyed warm.
