Crispy and Chewy Napa Cabbage Pancakes
[Toddler Meal Idea] Golden Brown Napa Cabbage Pancakes for the Whole Family
These Napa Cabbage Pancakes are a delightful dish that everyone in the family can enjoy. Adults can savor them with a simple dipping sauce, while babies will happily munch on the pancakes themselves without any extra seasoning. Inspired by the recipe from ‘The Kimchi Chronicles’ (Sumi’s Side Dishes), we’ve added glutinous rice flour to the batter for an extra chewy and crispy texture. I’ve incorporated 2 tablespoons of glutinous rice flour myself to achieve this delightful outcome.
Main Ingredients- 5-6 Napa cabbage leaves
- 1.5 paper cups of pancake mix
- 2 tablespoons glutinous rice flour
- 2 paper cups of cold water
Frying Oil- A little brown rice oil or cooking oil
- A little brown rice oil or cooking oil
Cooking Instructions
Step 1
Wash the Napa cabbage leaves thoroughly under running water to ensure they are clean and free from any dirt or debris. It’s important to rinse them meticulously.
Step 2
Once the Napa cabbage leaves are clean, trim the thick stem in the middle or thinly slice the leaves lengthwise. This step is crucial for ensuring the pancakes cook evenly and lie flat when frying.
Step 3
Let’s prepare the batter for these delicious cabbage pancakes! While a standard pancake batter ratio is typically 1:1 flour to water, for Napa Cabbage Pancakes, you’ll want a slightly thinner batter. Add a little more water than the flour amount to achieve this looser consistency. Remember to include the 2 tablespoons of glutinous rice flour! Whisk everything together until smooth, ensuring there are no lumps.
Step 4
Dip each prepared Napa cabbage leaf into the thin batter, coating both sides evenly. Make sure the batter forms a thin, consistent layer over the entire leaf.
Step 5
Heat a pan over medium heat and add a generous amount of brown rice oil or cooking oil. Place the battered cabbage leaves onto the hot pan, with the outer side (the broader part of the leaf) facing upwards. Gently press down on the thicker stem part to help the pancake lie flat and prevent it from flipping over during cooking.
Step 6
Reduce the heat to medium-low and cook until both sides are golden brown and beautifully crisp. This slow cooking process will result in pancakes that are wonderfully crispy on the outside and delightfully chewy on the inside. Enjoy your delicious creation!
