Main Ingredients- 1 handful Mini King Oyster Mushrooms (approx. 150-200g)
- 7 whole cloves Garlic
- 5 Green Chili Peppers
- 1 handful Stir-fry Anchovies (approx. 30-40g)
Seasoning & Others- 1.5 Tbsp Sugar
- A pinch of Sesame Seeds
- Plenty of Cooking Oil

Cooking Instructions
Step 1
First, prepare your ingredients. Cut the mini king oyster mushrooms into 1-2 pieces or bite-sized portions. Peel the whole garlic cloves and cut them into about 3 pieces each. Remove the stems from the green chili peppers and cut them into 3 pieces. For the anchovies, you can remove any fins or remaining guts for a cleaner taste.
Step 2
Heat a generous amount of cooking oil in a pan over medium heat. Add the prepared mini king oyster mushrooms and garlic cloves. Stir-fry them gently. Cooking the garlic until it’s golden brown and allowing the moisture from the mushrooms to evaporate will enhance their texture.

Once the mushrooms and garlic are partially cooked, add the stir-fry anchovies and the chopped green chili peppers. Stir in 1.5 tablespoons of sugar, mixing well so all ingredients are coated. The sugar helps balance the anchovies’ potential bitterness and adds a touch of sweetness.

Now, reduce the heat to low. Stir occasionally, flipping the garlic cloves to ensure they are evenly browned on all sides. Cook for a bit longer, making sure the anchovies become crispy without burning. This step is crucial for achieving that satisfying crunch. Finally, sprinkle with sesame seeds for a nutty aroma and finish the dish.
