Crispy and Cheesy Potato Rolls

Tired of the same old potatoes? This recipe transforms them into delightful potato cheese rolls – crispy on the outside, tender and gooey on the inside. Perfect for kids’ snacks or a special treat, you’ll want to make these again and again!
Ingredients
- 2 medium potatoes
- 1/4 onion
- 2 pinches of salt
- 3 strips of bacon
- 2 Tbsp cooking oil
- 2 slices of processed cheese
Cooking Instructions
Step 1
First, peel the potatoes thoroughly. You can use a vegetable peeler or a knife to easily remove the skin.

Once peeled, use a mandoline slicer or a sharp knife to cut the potatoes into thin, long julienne strips. Ensuring the strips are of uniform thickness will help them cook evenly.

Place all the julienned potatoes into a mixing bowl.

Add 2 pinches of salt to the julienned potatoes and gently mix. Let them sit for about 10 minutes. This step draws out excess moisture, contributing to a crispier final texture.

Finely julienne the onion, similar to how you prepared the potatoes. Cutting them too thickly might increase cooking time, so aim for thin strips.

Cut the bacon into strips as well, about the same thickness as the julienned onion. These will be sautéed later to add a wonderful savory flavor.

Drain the salted potatoes thoroughly using a colander. Gently squeeze out any excess water. This is crucial to prevent the mixture from becoming too wet.

Return the drained potatoes to the bowl and add the julienned onion. Mix everything together gently until well combined. Ensure the potatoes and onions are evenly distributed.

Now, heat a non-stick pan over low heat. Add the julienned bacon to the dry pan and cook until it becomes crispy. The bacon will render its own fat, which can be used for cooking the potatoes later. No need to add oil at this stage.

To the same pan where you cooked the bacon, add 2 Tbsp of cooking oil. Spread the potato and onion mixture evenly in the pan. Cook over low heat for about 5-10 minutes, or until the potatoes turn golden brown and translucent. Patience on low heat is key for crispiness.

Once the potatoes are almost cooked and look translucent, place the slices of processed cheese (cut into smaller pieces if desired) over the potato mixture. Add the crispy cooked bacon on top of the cheese. The melting cheese will help bind everything together.
Step 12
Carefully and gently roll up the potato mixture, encasing the cheese and bacon inside. Shape it into a log. Once rolled, you’ll have a delicious potato cheese roll with a delightful filling. You can slice it in half before serving if you prefer.
