Let’s make some delicious potato pancakes using the wonderfully fluffy potatoes that are in season! Potatoes, harvested from June to October, are rich in Vitamin C, offering surprising antioxidant benefits. They also help the body excrete excess sodium. Let’s take care of both taste and health with these tasty potatoes.
Pancake Ingredients- 3 potatoes (medium size)
- 200g shredded cheese (a mix of mozzarella, cheddar, gouda, etc.)

- 3 Tbsp frying powder (or tempura flour)

Cooking Instructions
Step 1
Begin by thoroughly washing the potatoes under running water to remove any soil. I’ve prepared about 3 medium-sized potatoes for this recipe.

For the cheese filling, I’ve chosen 200g of shredded cheese, a blend of mozzarella, cheddar, and gouda. Using a mix of cheeses will add a richer flavor profile.

Use a potato peeler to remove the skin from the washed potatoes. Don’t worry if some skin remains; you can trim it off with a knife after slicing the potato, so don’t stress too much with the peeler.

Once peeled, slice the potatoes thinly, about 0.3cm thick, and then julienne them into very fine shreds. The thinner the shreds, the crispier the pancake will be.

A mandoline slicer or julienne tool can make this process much faster and easier. However, since I only had a few potatoes, I carefully cut them into thin, uniform shreds with a knife. Aim for consistent thinness for the best texture.

Even though the julienned potatoes look like a lot, don’t worry! This amount will make about two delicious potato pancakes. Add 2-3 pinches of salt and a pinch of black pepper to the shredded potatoes. Then, add 3 tablespoons of frying powder and mix well to form a batter. No extra water is needed, as the potatoes will release enough moisture to create a cohesive batter.
Step 7
Potatoes are naturally starchy and tend to stick together. This characteristic is beneficial for potato pancakes, as it helps bind the ingredients. Therefore, avoid washing off the starch from the shredded potatoes.

For an even crispier result, you can substitute the frying powder with potato starch. I used frying powder today since I didn’t have potato starch on hand, and the outcome was still very satisfying. You’ll achieve great crispiness either way.

Now, let’s move on to the tips for making fantastic cheese potato pancakes! First, generously coat your frying pan with cooking oil and heat it over medium-high heat until it’s nicely hot. Once the pan is preheated, carefully place the potato batter onto the pan.

Use a ladle to scoop the potato mixture onto the hot pan. Then, using your hand or a spatula, gently spread the batter into a relatively thin, even layer. Shaping it into a circle will look nice.

While the potato pancakes are cooking, drizzle a little more oil around the edges occasionally. Frying them lightly in the oil will result in a wonderfully crispy and golden-brown pancake. Cooking over medium-low heat allows them to cook through evenly without burning.

Once one side of the potato pancake is golden brown and cooked, it’s time to add the cheese. Sprinkle your shredded cheese evenly over half of the pancake. Then, using a spatula, carefully fold the other half over the cheese, encasing it inside. Ensure the cheese is well-covered to prevent it from leaking out.

Gently press down on the folded cheese potato pancake with your spatula as it cooks. This helps to seal the cheese inside and ensures the pancake becomes extra crispy and flavorful.
