  • 1 Tbsp olive oil
  • 1 Tbsp dried parsley flakes
  • Parmesan cheese, grated (to taste)

First, thoroughly wash the potatoes under running water. Since we’re keeping the skin on, it’s crucial to use a vegetable brush to scrub away any dirt or impurities from every nook and cranny. Once clean, cut each potato into 8 wedges. Rinse the cut potatoes gently in cold water to remove excess starch, which will help them crisp up nicely.

Next, bring a pot of water to a rolling boil and add 1 teaspoon of salt. Carefully add the prepared potato wedges to the boiling water and let them cook for about 5 minutes. This par-boiling step partially cooks the potatoes, ensuring they become tender on the inside and cook faster in the oven.

After par-boiling, drain the potatoes using a colander, but don’t rinse them with cold water. Let them sit for a moment to allow some of the steam to escape. This helps to dry out the surface, contributing to a crispier final texture.

In a separate bowl, melt the 3 tablespoons of butter by microwaving it for about 1 minute. Once melted, add 1 tablespoon of olive oil, 1 tablespoon of parsley flakes, grated Parmesan cheese, a pinch of salt, and a pinch of black pepper. Whisk everything together until well combined to create your flavorful seasoning mixture.
