  • 200g Small Dried Anchovies
  • 50g Walnuts
  • 30g Pumpkin Seeds
  • 30g Sliced Almonds

  • 3 Tbsp Oligosaccharide (or corn syrup)
  • 1 Tbsp Toasted Sesame Seeds

Cooking Instructions

Step 1

First, prepare the walnuts, pumpkin seeds, and sliced almonds you’ll be using for the stir-fry. Feel free to use any other types of nuts you have on hand; customize it to your liking!

Step 2

Heat a dry pan over medium heat. Add the small dried anchovies and stir-fry until they become lightly golden and fragrant. This process removes any fishy smell and enhances their nutty flavor. Once lightly toasted, transfer the anchovies to a sieve and gently shake to remove any fine powder or crumbs. This step ensures a cleaner texture in the final dish.

Step 3

Return the toasted anchovies to the pan, and add all the prepared nuts. Drizzle 3 tablespoons of sunflower oil evenly over the ingredients. Stir continuously over medium-low heat to prevent burning and ensure even cooking of the anchovies and nuts.

When the anchovies and nuts are nicely toasted, create a small well in the center of the pan and add 2 tablespoons of oyster sauce. Pour in 3-4 tablespoons of water.
