Main Ingredients
  • 2 cups dried anchovies (small or for broth)
  • 1/2 cup walnuts
  • 1/4 cup pine nuts

Seasoning
  • 2-3 drizzles cooking oil (approx. 2-3 Tbsp)
  • 2 Tbsp sugar
  • 2 drizzles oligo syrup (approx. 2 Tbsp)
  • Sesame seeds, to taste

Cooking Instructions

Step 1

To achieve a crispy texture for both the anchovies and nuts, lightly toast them in a dry pan until fragrant and slightly golden. Roast the anchovies over low heat for 2-3 minutes until they become crisp and any fishy smell dissipates. Similarly, toast the walnuts and pine nuts for 1-2 minutes each over low heat until their nutty aroma is released. This step enhances their flavor and crunch.

Step 2

Combine the toasted anchovies and nuts in the pan. Drizzle in the cooking oil (about 2-3 tablespoons). Keep the heat on low and gently stir-fry to coat the anchovies and nuts evenly with oil. Be careful not to use too much oil, as it can make the stir-fry greasy. Once coated, immediately turn off the heat.

Step 3

Using the residual heat of the pan, it’s time to add the seasonings. Add the sugar (2 tablespoons) and oligo syrup (about 2 tablespoons) to the pan. Quickly toss the anchovies and nuts to ensure the sauce coats them evenly. Oligo syrup adds a glossy sheen and helps prevent the mixture from becoming too sticky.

Step 4

Finally, sprinkle in a generous amount of sesame seeds for added nutty flavor and aroma. Lightly crushing the sesame seeds before adding them can release more of their fragrance. Toss everything together one last time to ensure all ingredients are well combined. Transfer the finished anchovy and nut stir-fry to a serving dish. This delicious side dish is best stored in an airtight container once completely cooled to maintain its crispiness.
