Step 1
Before you begin cooking, prepare all the necessary ingredients. Wash the Korean green peppers thoroughly.

Trim the stems off the washed Korean green peppers. Then, cut them diagonally into 2-3 cm pieces. This cutting method helps the peppers absorb seasoning better and improves their texture.

Heat 2 tablespoons of cooking oil in a frying pan over low heat. Preheating the pan on low heat prevents the ingredients from burning.

Add the dried anchovies to the pan and stir-fry briefly to remove any fishy smell. Once the anchovies are lightly toasted, sprinkle 1 tablespoon of sugar evenly over them and continue to stir-fry. The cooking oil and sugar will coat the anchovies, creating a wonderfully crispy texture.
