  • 70g Almond flour (finely ground)
  • 270g Unsalted butter, softened to room temperature (ensure it’s spreadable)
  • 70g Sugar (adjust to your sweetness preference)
  • 1/2 tsp Vanilla extract (for a hint of fragrant flavor)

Step 1

First, sift the all-purpose flour twice into a bowl. This extra sifting helps create a lighter, more tender cookie. Add the finely ground almond flour to the same bowl and whisk them together until well combined.

In a separate mixing bowl, cream the softened unsalted butter until smooth and fluffy. Gradually add the sugar and continue mixing for about 1-2 minutes until well incorporated. Be careful not to overmix, as this can lead to a tough cookie.

Stir in the vanilla extract into the butter-sugar mixture. Mix just until combined to add a lovely aroma.

Add the sifted dry ingredients (flour and almond flour mixture) to the butter mixture. Use a spatula to gently fold them in, using a cutting motion. Mix only until no dry flour streaks remain. Overmixing at this stage will develop gluten and affect the cookie’s crispness.

Once the dough just comes together, form it into a ball. Try not to knead it too much, as this can also make the cookies tough.

Divide the dough into small portions, about 15-20g each. Roll each portion between your palms to form a long log shape. Taper the ends to make them thinner and gently curve the log to create the classic Kipfel shape. Alternatively, you can roll the entire dough into a long log, then cut it into equal pieces and shape each piece.

Place the shaped cookies on a baking sheet lined with parchment paper. Bake in a preheated oven at 190°C (375°F) for approximately 15 minutes, or until the edges of the cookies turn a light golden brown.
