Hello everyone! Today, we’re going to make incredibly simple and crispy lotus root chips using an air fryer. These are fantastic for kids’ snacks and are the perfect companion for a cold beer when you’re feeling peckish. Shall we get started?

First, peel the lotus root thoroughly. Then, slice it into thin, uniform chips, about 0.2mm to 0.5mm thick. Slicing them too thick will result in less crispiness, while too thin might cause them to burn, so maintaining an appropriate thickness is key. If preparing the lotus root is too much hassle, feel free to use pre-prepared lotus root from the grocery store. Once sliced, soak the lotus root in water with a little vinegar (about 1/4 cup of a paper cup) for 10 minutes to prevent browning.
Step 3
Remove the lotus root from the vinegar water and rinse lightly under cold running water. Afterward, use paper towels to meticulously pat dry the surface of the lotus root. Leftover moisture can cause oil splattering during cooking or prevent the chips from becoming crispy, so this step is crucial for achieving the best results.
Step 4
Now it’s time for seasoning. In a bowl with the dried lotus root slices, add half a spoon (1/2 tsp) of salt and 3 tablespoons of olive oil. Gently toss with your hands to ensure the seasoning is evenly distributed among all the lotus root slices. The olive oil will coat the surface, helping them to cook up extra crispy. If you prefer a touch of sweetness, you can add a little sugar to your liking (optional).

Line the air fryer basket with parchment paper and arrange the seasoned lotus root slices in a single layer, making sure they don’t overlap. This ensures even crisping. Preheat the air fryer if your model requires it, then set the temperature to 180°C (350°F) and cook for 10 minutes. After 10 minutes, carefully remove the basket, flip the lotus root slices, and cook for another 10 minutes at 180°C (350°F). Cooking times may vary slightly depending on your air fryer model, so check them midway and adjust as needed based on their color.
