Main Ingredients for Drumettes

  • 300g Chicken drumettes
  • 1 cup Milk (to remove gamey odor)
  • 1/2 cup Frying powder (for a crispy texture)

Delicious Marinade (Brine)

  • 1.5 Tbsp Soy sauce (dark soy sauce)
  • 1 Tbsp Onion juice
  • 1 Tbsp Mirin (or cooking wine)
  • 1 Tbsp Ginger wine or Cheongju (Korean rice wine) (to remove gamey odor)
  • 0.5 Tbsp Sugar (for umami and shine)
  • Pinch of Garlic salt or regular salt
  • Pinch of Black pepper

Cooking Instructions

We’ll soak the chicken drumettes in milk to eliminate any gamey odor and tenderize the meat. Lightly rinse the drumettes under cold running water, then pat them thoroughly dry with paper towels. Place the drumettes in a deep bowl, pour enough milk to cover them completely, and let them soak for about 15 minutes.

While the drumettes are soaking in milk, let’s prepare the delicious marinade. In a bowl, combine 1.5 Tbsp of soy sauce, 1 Tbsp of mirin, 1 Tbsp of onion juice, 1 Tbsp of ginger wine (or Cheongju), and 0.5 Tbsp of sugar. Stir until the sugar is dissolved. Finally, add a pinch of garlic salt (or regular salt) and a pinch of black pepper to season the mixture.

Remove the drumettes from the milk and rinse them gently once more under running water. Drain them well in a colander, ensuring as much moisture as possible is removed. Then, place the marinated drumettes into the prepared marinade and toss to coat them evenly. Cover and refrigerate for at least 1 hour, or preferably 2-3 hours, to allow the flavors to penetrate deeply into the meat, making them much tastier.

Now it’s time to cook the drumettes until they are crispy. You can air fry them directly like this, but coating them lightly with frying powder will result in even crispier and more appealing chicken. If you’re using frying powder, make sure the drumettes are completely dry before coating to prevent clumps and ensure an even application.

Add the marinated drumettes to the frying powder and coat them evenly. Gently shake off any excess powder. Line the air fryer basket with parchment paper and arrange the drumettes in a single layer, ensuring they don’t overlap. Preheat your air fryer to 180°C (350°F) and cook for 20 minutes. (Please adjust the cooking time and temperature according to your air fryer’s specifications.)

About 10 minutes into the cooking time, open the air fryer basket and flip the drumettes over. This step ensures that all sides of the drumettes cook evenly and become golden brown and crispy.
