  • 1/2 tsp minced garlic
  • 1/2 tsp chopped scallion

  • 1 Tbsp toasted sesame seeds
  • 1 Tbsp sesame oil

First, prepare the star of today’s dish: fresh spinach.

Trim off the root ends of the spinach. This is where dirt can often hide. Also, remove any wilted or damaged leaves for the best result.

Rinse the trimmed spinach thoroughly under cold running water. Gently swish it around to ensure all dirt, especially around the roots, is washed away.

Bring about 500ml of water to a rolling boil in a pot. Add 1 tablespoon of salt to the boiling water. Adding salt helps the spinach retain its vibrant green color.

Once the water is boiling, add the prepared spinach and blanch for about 30 seconds only. Blanching briefly is the secret to maintaining a crisp texture!

Immediately remove the blanched spinach from the hot water and plunge it into a bowl of cold water to stop the cooking process. Drain the spinach well in a colander, then firmly squeeze out as much excess water as possible using your hands. Removing excess water is crucial to prevent the salad from becoming watery and bland.

Place the squeezed spinach in a mixing bowl. Add the minced garlic, chopped scallion, a pinch of salt, toasted sesame seeds, and sesame oil. Gently mix and toss with your hands until all the seasonings are evenly distributed. Taste and adjust salt if needed.
