Spicy & Sweet Dressing

  • Gochujang (Korean chili paste) 0.5 Tbsp
  • Soy Sauce 2 Tbsp
  • Plum Extract (Maesil Cheong) 1 Tbsp
  • Red Pepper Flakes (Gochugaru) 1 Tbsp
  • Sesame Oil 1 Tbsp
  • Toasted Sesame Seeds 1 Tbsp (for garnish)

Cooking Instructions

Wash the fresh scallions thoroughly under running water to remove any dirt or debris. Then, briefly blanch them in boiling water for about 20 seconds. This step softens the scallions slightly while preserving their crisp texture, enhancing the overall dish.

Immediately rinse the blanched scallions in cold water to stop the cooking process and cool them down. After rinsing, gently squeeze out as much excess water as possible. This is crucial to prevent the salad from becoming watery and to ensure the dressing adheres well.

Cut the drained scallions into bite-sized pieces, approximately 5-7 cm long. Place the cut scallions into a large mixing bowl, ready for dressing. Using a large bowl makes it easier to toss and ensure all pieces are evenly coated.

First, sprinkle 1 Tbsp of red pepper flakes (gochugaru) over the scallions. This adds a vibrant color and a pleasant spicy kick.
