Try making this delicious radish salad using fresh, crisp radishes from the winter season. It’s made without salting the radishes beforehand, preserving their crunchy texture. It’s an excellent side dish that’s perfect when you have a lack of appetite, becoming a true rice thief! The harmonious blend of spicy, sweet, and tangy flavors is exquisite!

Main Ingredients

  • 1/3 Korean radish (approx. 400g)
  • 1 red chili pepper
  • 1/5 onion

Seasoning Ingredients

  • 2 Tbsp red pepper flakes (gochugaru)
  • 1.5 Tbsp minced garlic
  • 2 Tbsp fish sauce (anchovy or sand lance)
  • 0.5 Tbsp salted shrimp (minced)
  • 2 Tbsp plum extract (maesilcheong)
  • 2 Tbsp vinegar
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

Step 1

First, prepare all the ingredients for the radish salad. Wash the radish, peel it, and then wash the red chili pepper and onion under running water.

Slice the radish into thin strips, about 0.3cm thick and long. If they are too thin, they might lose their texture, and if too thick, the seasoning might not penetrate well. Slice the red chili pepper and onion into similar lengths and thickness. (Optional: adding 1 more Korean green chili pepper will add a spicier kick.)

Place the julienned radish and onion in a bowl. Add 2 tablespoons of gochugaru (red pepper flakes). At this stage, we are minimizing the seasoning to just coat the radish with color.

Gently mix with your hands to evenly coat the radish and onion with the red pepper flakes. Toss lightly until the radish turns a reddish hue. This helps prevent the radish from releasing too much moisture and maintains its crispiness.

Now, add all the remaining seasoning ingredients. Add 1.5 Tbsp minced garlic, 2 Tbsp fish sauce, 0.5 Tbsp minced salted shrimp, 2 Tbsp plum extract, and 2 Tbsp vinegar. Mix well.

Finally, add the julienned red chili pepper and 1 Tbsp toasted sesame seeds, and mix everything together to finish. Taste and if it’s not salty enough, you can add a tiny bit more fish sauce or salt. The finished radish salad is delicious right away, but it becomes even more refreshing and tasty if chilled in the refrigerator for a while.
