Salad Ingredients
- 1 bunch Sea Purslane (cleaned)
- 1 Tbsp Sesame Oil
- 1 Tbsp Fish Sauce (or Anchovy Sauce)
- 1/3 Tbsp Salt (adjust to taste)
- A pinch of Sugar (enhances flavor)
- 1/4 tsp Minced Garlic
- A sprinkle of Sesame Seeds (for garnish)
Cooking Instructions
Step 1
Rinse the fresh Sea Purslane thoroughly under running water. Bring a pot of water to a boil with about 1/2 tsp of salt. Blanch the Sea Purslane for approximately 5 seconds, flip it over, and blanch for another 5 seconds. Be careful not to overcook, as this will lose its crispness.
Step 2
Immediately rinse the blanched Sea Purslane in cold water to cool it down. This helps maintain its fresh, crisp texture. Gently squeeze out excess water with your hands, then cut the purslane into manageable lengths, about half its original size.
Step 3
In a bowl, combine the squeezed Sea Purslane with 1 Tbsp of sesame oil, 1 Tbsp of fish sauce, 1/4 tsp of minced garlic, 1/3 Tbsp of salt, and a pinch of sugar. Gently toss the ingredients together with your hands until everything is evenly coated. Taste and adjust seasoning with more salt or fish sauce if needed.
