Pickle Ingredients

  • 3 Cucumbers
  • 1 Bell Pepper (using a variety of colors is recommended for extra visual appeal)
  • A small amount of Cabbage (optional, for added texture)

Tangy & Sweet Brine

  • 550ml Water
  • 250ml Sugar
  • 250ml Vinegar
  • 1/3 tsp Salt

Cooking Instructions

First, thoroughly wash 3 cucumbers and 1 bell pepper under running water. For the cucumbers, gently scrape off the small ridges with the back of a knife to make them smoother. (Tip: Using mini bell peppers makes them cuter and easier to eat!) Cabbage is optional; if you choose to add it, just a small amount is sufficient.

Chop the cleaned cucumbers, bell pepper, and prepared cabbage into bite-sized pieces. Slice the cucumbers about 0.5-1 cm thick into rounds or half-moons. Cut the bell pepper and cabbage into similar sizes.

Now, let’s make the delicious brine that will define the pickle’s flavor! Combine 550ml water, 250ml sugar, and 250ml vinegar in a saucepan. Bring to a simmer over medium heat. Once the sugar has completely dissolved and the brine comes to a gentle boil, turn off the heat. (Tip: I used organic unrefined sugar, which gave it a slightly darker color. Regular sugar works perfectly fine too.)

Sterilize a glass jar or container by boiling it in hot water. Pack the chopped vegetables snugly into the sterilized container. Once the vegetables are in, pour the hot brine over them, ensuring they are fully submerged. Pouring the brine while it’s hot helps the vegetables stay crisp.
