Main Ingredients

  • 2 medium onions

Sweet & Sour Pickling Brine (Equal Parts)

  • 1 part sugar : 1 part water : 1 part vinegar (e.g., using a standard cup or shot glass for measurement)

Cooking Instructions

Step 1

Wash the onions thoroughly under running water. Peel off the outer skin and slice them thinly into julienne strips. Slicing them thinly helps the marinade penetrate better and ensures a crispier texture.

Step 1

Step 2

Place the thinly sliced onions directly into a clean, dry container or airtight jar. Ensure there’s no excess water on the onions, as this can make them mushy or spoil the pickle.

Step 2

Step 3

Now, let’s prepare the pickling brine. You can use any measuring cup you have on hand (like a standard drinking glass or a shot glass), but the key is to maintain the ‘equal parts’ ratio. Measure out sugar, water, and vinegar in a 1:1:1 proportion.

Step 3

Step 4

In a small saucepan, combine the sugar and water. Heat over low flame, stirring gently until the sugar is completely dissolved. Once dissolved, remove from heat and immediately stir in the vinegar. The residual heat will slightly warm the vinegar, mellowing its sharpness.

Step 4

Step 5

Pour the warm pickling brine directly over the sliced onions in the container while the brine is still hot. Pouring it hot helps to slightly soften the onions while preserving their crispness and allowing the flavors to infuse effectively.

Step 5

Step 6

Secure the lid tightly on the container and gently shake it to ensure the brine is evenly distributed among the onions. Let it sit at room temperature for about 1 hour for the onions to pickle. After that, store it in the refrigerator for a chilled, refreshing taste.

Step 6

Step 7

The next day, I tried them, and they were perfectly pickled, wonderfully crisp, and paired beautifully with my pho!

Step 7

Step 8

Enjoy these with your favorite pho! The sweet and sour pickled onions will cut through the richness and enhance the overall flavor. Enjoy your meal! ♥
