This recipe is wonderfully simple, requiring only seasonal Napa cabbage and your leftover kimchi seasoning for a quick and flavorful side dish. Main Ingredients

  • 2 heads Napa cabbage (Al-baechu)
  • Kimchi seasoning (from frozen storage), desired amount
  • Sesame seeds, a pinch
  • 1/2 Onion
  • 1/3 bunch Chives
  • 4 Cheongyang peppers (Korean chili peppers)
  • 1 stalk Green onion

Cooking Instructions

Step 1

First, wash the Napa cabbage thoroughly and cut it into bite-sized pieces, about 4-5 cm long. Place the cut cabbage in a large bowl, add about half a cup of coarse sea salt (measured with a paper cup), and gently mix. Let it salt for 40 minutes, turning it once or twice during this time to ensure even wilting and a crisp texture. If you have pre-frozen kimchi seasoning, take it out of the freezer to thaw at room temperature before you begin cooking.

While the cabbage is salting, let’s prepare the other vegetables. Wash the chives under running water and cut them into 4 sections. Remove the stems from the Cheongyang peppers and slice them diagonally to add a spicy kick. Peel and thinly slice the onion into slivers to bring sweetness and a satisfying crunch. Having these vegetables prepped beforehand will make the seasoning process much smoother.

Once the cabbage has been salted for 40 minutes, gently squeeze out any excess water and place it in a mixing bowl. Add the thawed kimchi seasoning, diagonally sliced Cheongyang peppers, and slivered onion. Gently mix everything together, being careful not to mash the cabbage. Once the seasoning is somewhat incorporated, add the prepared chives and chopped green onion. Toss lightly one more time. It’s best to mix the chives and green onion briefly to prevent them from becoming mushy.

Finally, sprinkle a generous amount of sesame seeds over the mixture for added nutty flavor. Gently toss everything together by hand to combine. The Geotjeori is delicious served immediately, but chilling it in the refrigerator for a short while will enhance its refreshing taste. Store it in an airtight container to keep it fresh for several days.
