Main Ingredients
  • 20 fresh lettuce leaves

Dressing Ingredients
  • 2 Tbsp red chili flakes (gochugaru)
  • 1 Tbsp minced garlic
  • 1 Tbsp soy sauce (Korean soup soy sauce or regular soy sauce)
  • 1 Tbsp sugar (adjust to taste)
  • 2 Tbsp vinegar
  • 1 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds (for garnish)

Cooking Instructions

Step 1

Gently wash the lettuce leaves under cold running water and thoroughly pat them dry. If the leaves are large, you can tear them into 2-3 bite-sized pieces or simply tear them by hand for a more rustic look. Handle the delicate leaves with care to avoid bruising.

Step 2

In a large bowl, combine all the dressing ingredients. Add the red chili flakes, minced garlic, soy sauce, sugar, vinegar, and sesame oil. Stir well with a spoon until the sugar is dissolved and the dressing is evenly mixed.

Step 3

Place the prepared lettuce on one side of the bowl. To ensure the dressing coats the lettuce evenly without making it too salty, add small handfuls of lettuce to the dressing and gently toss. Repeat this process gradually. This method helps to achieve the perfect seasoning balance and prevents the lettuce from becoming soggy.

Step 4

Sprinkle the toasted sesame seeds generously over the salad. With a light touch and relaxed wrist, very gently toss the salad to combine. Be careful not to crush the delicate lettuce leaves. Your crisp and delicious lettuce salad is now ready!

Step 5

Enjoy this Sangchu Geotjeori as a refreshing side salad, or try mixing it with a bowl of warm rice for a delightful bibimbap-style dish! For an extra treat, add a drizzle of sesame oil over the rice and geoteori mixture. It also makes an excellent wrap when enjoyed with grilled meats.
