Burdock root has long been recognized as a precious root vegetable with excellent benefits for kidney function and weight management. Main Ingredients

  • 100g Burdock Root (about 1/2 root)
  • 1/4 Green Bell Pepper

Cooking Instructions

Wash the burdock root thoroughly. Then, use a peeler or knife to thinly peel the skin. Next, slice it thinly into rounds or strips, similar to sharpening a pencil. Thin slices allow the dressing to penetrate better and result in a more tender texture.

Wash the green bell pepper under running water, remove the seeds, and slice it into thin matchsticks, about 0.5 cm wide. The vibrant color will enhance the visual appeal of your salad.

Fill a pot with plenty of water and bring it to a boil. Add a pinch of salt. Once the water is boiling, add the sliced burdock root and blanch for about 1-2 minutes. Blanching quickly removes any bitterness from the burdock while keeping its crisp texture.

Immediately after blanching, transfer the burdock root to a bowl of cold water to cool it down. Drain the burdock root in a colander and gently squeeze out as much water as possible with your hands. Properly draining the water prevents the dressing from becoming diluted.

In a bowl, combine the drained burdock root and the julienned green bell pepper. Add 1/2 Tbsp soy sauce, 1/2 Tbsp sugar, 1 Tbsp vinegar, a pinch of black pepper, and 1 tsp sesame oil. Gently mix everything together until well combined. Taste and adjust the seasoning (soy sauce, sugar, or vinegar) according to your preference for an even more delicious result. Serve the finished burdock root salad beautifully plated and enjoy!
