Main Ingredients- 3 medium potatoes (about fist-sized)
- 1/4 onion
- 3-4 Korean green chili peppers (kkwari gochu)
Cooking Instructions
Step 1
Begin by thoroughly washing and preparing all your ingredients. Peel the potatoes, remove the skin from the onion, and trim the stems from the Korean green chili peppers.
Step 2
Cut the prepared potatoes into bite-sized cubes. To help them maintain their shape and prevent them from breaking apart during cooking, soak the cubed potatoes in cold water for about 10 minutes to remove excess starch. Drain them completely.
Step 3
Dice the onion and cut the Korean green chili peppers into pieces roughly the same size as the potato cubes. If the chili peppers are cut too small, they might become mushy when cooked, so aim for a size consistent with the potatoes.
Step 4
In a bowl, combine the cubed potatoes, diced onion, and cut chili peppers. Add the soy sauce, corn syrup, and perilla oil. Gently toss everything together until the ingredients are evenly coated with the seasoning mixture. Adding the perilla oil at this stage infuses a wonderful nutty aroma.

Heat a pan or pot over medium heat. Add all the seasoned ingredients without adding any water. After a short while, the potatoes and onions will naturally release their moisture and begin to bubble. Once it starts boiling, reduce the heat to low, cover the pot, and let it simmer gently until the potatoes are tender. The moisture released from the potatoes themselves is sufficient to cook them to a lovely tenderness.

Continue to simmer over low heat with the lid on, allowing the potatoes to become soft and the sauce to thicken and beautifully infuse into the potatoes. It’s crucial not to stir too frequently to prevent the potatoes from breaking and losing their shape. Gently stir only occasionally, making sure to scrape the bottom of the pot to prevent sticking.
