Salad Ingredients

  • 3 Korean green chilies (asagi gochu)
  • 20 cherry tomatoes
  • 3 fresh perilla leaves (kaennip)
  • 1/4 small onion

Cooking Instructions

Begin by preparing your 20 cherry tomatoes. Wash them thoroughly under running water, remove the small stems, and then cut each tomato in half lengthwise. For the crisp Korean green chilies (asagi gochu), initially, 6 were planned, but upon cutting, it seemed like the quantity would be too much compared to the tomatoes. Therefore, only 3 were used. Slice them into bite-sized pieces that are similar in size to the halved cherry tomatoes. Place the halved cherry tomatoes and the sliced chilies into a mixing bowl.

Wash the 3 perilla leaves (kaennip) and pat them dry. Finely julienne the leaves. Next, peel the 1/4 onion and mince it very finely. Finely mincing the onion will prevent a harsh oniony flavor from dominating the salad and will add a subtle depth of flavor.

Now, let’s make the delicious dressing. In a separate clean bowl, combine 3 tablespoons of olive oil, 2 tablespoons of vinegar (feel free to add a little more if you prefer a tangier dressing), 1 tablespoon of sweet plum extract (maesilcheong – you can adjust this based on your preferred sweetness), and 1 tablespoon of soy sauce for savory depth. Add the finely minced perilla leaves and onion to the dressing. Whisk everything together using a whisk or a spoon until well combined, creating a flavorful dressing.

Finally, pour the prepared dressing generously over the crisp chilies and sweet cherry tomatoes in the mixing bowl. Gently toss the salad to ensure that all the ingredients are evenly coated with the dressing. Once everything is well mixed, your crisp chili and tomato salad is ready!
