Ingredients- 450g fresh chard leaves

Trim the very ends of the chard leaves. Be careful not to cut too much, as this can cause the leaves to separate when blanched.

Bring a large pot of water to a rolling boil. Add 1/2 Tbsp of salt to the boiling water; this helps maintain the vibrant green color of the chard and speeds up the cooking time. Carefully add the chard leaves and blanch for just 30 seconds. Overcooking will make them mushy.

Immediately remove the blanched chard from the hot water and plunge it into a bowl of ice-cold water. This crucial step stops the cooking process, preserving the chard’s delightful crispness and bright green hue.
Step 5
Gently wash the chard, paying close attention to the stems where dirt might be hiding. Once clean, lightly squeeze out excess water from the leaves. Avoid squeezing too hard, which could tear the delicate leaves.
