In a bowl, toss the julienned carrots with 5g of salt and let them sit for about 10 minutes to draw out moisture. This step helps to achieve a crisp texture. The salt amount should be around 1% of the carrot’s weight.

After 10 minutes, gently squeeze out any excess water from the carrots and place them in a clean bowl. Add 5 tablespoons of apple cider vinegar (you can substitute with regular fermented vinegar if you don’t have apple cider vinegar), 4 tablespoons of plum extract, and 1 tablespoon of honey. Mix everything well to ensure the dressing evenly coats the carrots. This combination creates a sweet and tangy flavor that will infuse into the carrots.

Finally, for an added touch of freshness, you can stir in a bit of lemon juice, if desired. Mix everything together thoroughly so the dressing is well distributed.
