  • 1kg Korean radish (approx. 1 medium)
  • 2/3 stalk green onion

Cooking Instructions

Step 1

Using a peeler, carefully peel the skin off the fresh Korean radish. While it’s fine to leave the skin on for some dishes, peeling it ensures a cleaner taste and texture for this salad.

Step 2

Once peeled, slice the radish thinly into strips about 0.2 cm thick. This thickness is key: too thick and the seasoning won’t penetrate well, too thin and the texture might be lost. Aim for just right!

Step 3

Prepare the green onion by thinly slicing it on an angle. This will add a wonderful aromatic touch to your radish salad. Angled slices integrate nicely with the radish strips.

Step 4

In a large bowl, combine the julienned radish with Gochugaru (Korean chili flakes). Mix thoroughly to evenly coat the radish strips, giving them a base color. This step helps the radish absorb the subsequent seasonings better and develops a beautiful hue.

Step 5

Now it’s time for the main seasoning. Add the Saeujeot (fermented shrimp paste), fish sauce (or soy sauce for soup), minced garlic, minced ginger, and the plum syrup for a touch of sweetness to the gochugaru-coated radish. Gently mix everything together with your hands, ensuring all the radish strips are well-seasoned. Tip: For an even better distribution of flavor, you can lightly mince the Saeujeot before adding it. This enhances the umami!

Step 6

Finally, add the sliced green onions and toasted sesame seeds. Give it a final gentle toss to combine everything. Be careful not to overmix, as this can release too much water. Just mix until the ingredients are well incorporated. Your delicious and crisp radish salad is ready!
