What to Eat Today? Sweet Persimmon Salad
I’m enjoying the delicious persimmons my brother-in-law brought from a friend’s farm. Since I didn’t have any side dishes today, I decided to make a sweet and refreshing persimmon salad. It’s a perfect way to use up ripe persimmons!
Main Ingredients- 1 ripe persimmon
- 1/4 Korean pear
Cooking Instructions
Step 1
First, wash the persimmon thoroughly. Make shallow cross-shaped cuts (+) on the skin of the persimmon with a knife; this will make peeling much easier.
Step 2
Peel the skin off the persimmon using the cuts you made, with a peeler or a paring knife. Then, thinly slice the persimmon and the pear. After that, julienne them into thin strips, about 0.3-0.5 cm thick. Slicing them to similar thicknesses will ensure a harmonious texture.
Step 3
Place the julienned persimmon and pear into a mixing bowl. Add the seasoning ingredients: anchovy sauce, red pepper flakes, minced garlic, sesame oil, and sesame seeds. You can adjust the amount of seasoning to your preference.
Step 4
Now, gently mix all the ingredients together with your hands or a spatula until well combined. Be careful not to mash the persimmon, but ensure the seasoning is evenly distributed. Mix gently for about 1-2 minutes.
Step 5
And there you have it! A mouth-watering persimmon salad is ready. The crisp persimmon and pear combined with the spicy and sweet seasoning look so appetizing, don’t they?
