This mung bean sprout salad often tastes even better than soybean sprout salad! While I don’t make it as often as I should, it’s a wonderfully appealing side dish that truly awakens the appetite when you’re not feeling particularly hungry. The blend of fragrant sesame oil and nutty sesame seeds creates a flavor that everyone will love. You can whip this up with just a few ingredients, so follow along and try it now!

Ingredients

  • 200g fresh mung bean sprouts
  • 1 stalk scallion
  • 2/3 tsp salt
  • 1 tsp minced garlic
  • 2 tsp sesame oil
  • 2 tsp toasted sesame seeds

Cooking Instructions

First, fill a pot with plenty of water and bring it to a boil. While the water is heating, rinse the mung bean sprouts thoroughly under running water a couple of times and drain them. Finely chop the scallions and set them aside. You can also use green onions instead of scallions.

Once the water is boiling vigorously, add the prepared mung bean sprouts. Cover the pot and blanch them for exactly 1 minute and 30 seconds. Be careful not to overcook them, as they will become mushy and lose their crisp texture, so be sure to time it correctly.

As soon as the blanched mung bean sprouts are drained, immediately rinse them under cold water to quickly cool them down. This step is crucial for maintaining their crispness. Gently press the cooled sprouts with your hands to squeeze out as much water as possible.

Place the drained mung bean sprouts in a bowl. Add all the prepared seasoning ingredients: the chopped scallions (1 stalk), minced garlic (1 tsp), salt (2/3 tsp), and sesame oil (2 tsp) for that delicious nutty flavor.

Now, gently mix everything together with your hands to ensure the seasoning is evenly distributed. Be careful not to mix too vigorously, as this could mash the sprouts. Finally, sprinkle the toasted sesame seeds (2 tsp) over the top and give it a light toss. Your delicious mung bean sprout salad is now complete! It’s a fantastic side dish for rice or a great accompaniment to other meals.
